    The grand dame of Hong Kong hotels situated by the harbour of Tsim Sha Tsui has a stately bar to match. Wood panelled walls, parquet flooring, clubby leather sofas and a grand piano give this small nook on the first floor of the hotel an understated grandeur. It is a refreshing antithesis to the bigger, brassier bars nearby with million dollar views. The furthest visitors here will really need to look is along the dark marble bar to the spirits gleaming behind the poised bartenders, many of whom have been serving visitors to the hotel for decades. Classics like Old Fashions and Screwdrivers – allegedly brought to the hotel by Clark Gable during a stay in the 1930s - are made with unfussy skill, while requests to suit tastes and moods are generally greeted in the same style.  Among others, there’s a chocolate section on the cocktail list, including the Chocolate Orange that blends cognac with marmalade vodka. When the pianist tickles the ivories with jazz standards, it’s even more like a decompression from the hectic street life of Kowloon. Hotel guests sipping martinis and business deals being sealed make up for a sizeable quota of the clientèle, while others often come for a pre-dinner pick-me-up or a late night wind down.
